Macaroons are small round light cookies with a soft filling inside, ganache (a kind of butter cream). The cookies consist of a mixture of sugar, almond and egg whites, a kind of mousse. As a result, they are sometimes called ‘meringue’ biscuits.

Macaroons come in different colours and flavours. Depending on the colour, a flavour has been added, red for cherry flavour, green for pistachio (instead of almonds), yellow for lemon flavour, etc. They are originally from France. There, the monks made cookies made from a mixture of ground almonds with sugar and egg whites.
