Macaroons are small round light cookies with a soft filling inside, ganache (a kind of butter cream). The cookies consist of a mixture of sugar, almond and egg whites, a kind of mousse. As a result, they are sometimes called ‘meringue’ biscuits.

Macaroons come in different colours and flavours. Depending on the colour, a flavour has been added, red for cherry flavour, green for pistachio (instead of almonds), yellow for lemon flavour, etc. They are originally from France.
